Just in time for the Memorial Day Weekend! Last night Grant, the bartender in Tydes Restaurant, at the Four Seasons in Santa Barbara, prepared this great drink for me. Keep infused pineapple in a jar in the refrigerator and you will be ready to give yourself, as well as guests, a soothing treat on a warm day.
Cut 1/2 of a pineapple into 1 inch pieces.
Place in glass jar and cover with 750 ml bottle of silver tequila.
Let the tequila infuse the pineapple for three days.
To prepare the drink:
2 oz strained, pineapple infused tequila
1 oz watermelon juice
1 oz fresh lime juice
1 teaspoon agave nectar
Shake well and strain into glass
Serve with a wedge of lime.
